Delight for discerning palates
Rafael Hernandez, Mission Juriquilla Hotel Restaurant´s Chef,
where he conducted a gastronomic sampling of traditional Queretaro dishes, said
that this cuisine is very little known, "but has a good variety."
He explained that to learn more about queretana kitchen,
"we as a chefs had to investigate in old books, plus we had to find
support in gastronomy schools."
He said it is very risky to say how many dishes there are in
total, because there are a lot of traditional foods in every town of which
little is known, but the "Queretana Cuisine " which was held from
December 4 to 13, only found about 30 dishes.
He said that Querétaro is distinguished more by having a
"ranch type cuisine", the most popular dishes being enchiladas
Queretaro, turkey, and crumbs gorditas, which are filled with carnitas or
cheese and are served with a stew.
Rafael Hernandez explained that the traditional cuisine of this
state is characterized by mainly using ingredients like cactus, xoconostle,
figs, and dried chiles.
He noted that one of the most traditional desserts is the
"Ice Cream butter", which is of regional origin 100 percent
Queretaro. "It is prepared with vanilla and has crystallized sweetner and
the latter ingredient gives it a different taste compared to the rest of the
ice cream."
